Welcome to my cookbook, which is a collection of recipes scribbled on 3x5 cards, torn out of magazines, or (since the early 1990s) printed out on computer paper. It's time to get these unruly recipes whipped into shape. I have given credit wherever I can, but I don't know the origin of all of these recipes. black beans with fontinella cheese

Note: A spur-of-the-moment creation with black beans that takes only a few moments to prepare at the last minute.

Ingredients:

  • 1 can black beans, washed and rained
  • sprinkle of chili powder
  • a few strips of bacon, maybe 2 or 3 full length strips
  • fontinella cheese

I cooked the bacon in the microwave until crispy, letting both bacon fat and bacon strips cool separately. When cool enough to handle, cut up the bacon strips into bacon bits. When you are just about ready to eat, reheat the bacon fat in a heavy pan. Add beans and stir-fry quickly to get them hot all the way through. Stir in bacon bits and a sprinkle of chili powder. Divide the cooked beans into their individual serving dishes and sprinkle lots of the grated cheese on top.

Generously serves 2 with 35 grams of carbohydrate per person. Can also be divided into three servings.
