Welcome to my cookbook, which is a collection of recipes scribbled on 3x5 cards, torn out of magazines, or (since the early 1990s) printed out on computer paper. It's time to get these unruly recipes whipped into shape. I have given credit wherever I can, but I don't know the origin of all of these recipes. world's easiest slow-cooked barbecued chicken

Note: It works fine with either a whole chicken or with cut-up chicken pieces, especially dark meat. A good way to use up chicken thighs or drumsticks.

Ingredients:

  • 2-4 pounds of chicken
  • some olive oil
  • an onion
  • a bell pepper
  • any BBQ sauce you like, you'll need an entire half a bottle for the larger chickens

There isn't a lot to this one, and it does not rely on any exact mix of times or ingredients. The most important thing to remember is that onion always tastes much better in the crockpot if it has been sauteed in olive oil to get it nice and golden for a few minutes before adding it to the crockpot. So what you basically want to do is wash the chicken, salt and pepper inside and out, put chicken in crockpot, then scatter the chopped SAUTEED onion and chopped bell pepper over the chicken. Then pour 1/2 cup or so of the BBQ sauce all over the chicken or chicken parts to cover them well. They'll be ready in the crockpot after 8 hours but they can happily cook away in there for hours longer.
