Welcome to my cookbook, which is a collection of recipes scribbled on 3x5 cards, torn out of magazines, or (since the early 1990s) printed out on computer paper. It's time to get these unruly recipes whipped into shape. I have given credit wherever I can, but I don't know the origin of all of these recipes. maple butter cheeseburger

Note: This one's for the low carb crowd -- no bread, no fries or potato on the side -- just good red meat and cheese.

Ingredients:

  • 1/2 pound ground beef per person
  • cut off a nice slice of sharp cheddar cheese off a quality block -- one good thick slice per person
  • tiny amount maple syrup -- about 1/2 teaspoon per person
  • 1/2 stick real butter
  • salt, freshly ground black pepper

Instructions:

Not a lot to this one. Form the patties, salt, pepper. Cut off two pats of butter and set aside, then melt the rest of the butter in the frying pan. Brown the thick patties on both sides. Put a pat of butter on top of each patty and drizzle with a tiny amount of real maple syrup -- not too much, this is a low carb recipe! Put a lid on the frying pan and cook on medium-low or so until done, giving you a chance to make a low carb side. My choice was brocolli with two kinds of cheese melted in. Rather than put a cold cheese slice on my burger, right before the burgers came off, I put a thick slice on each one and let it melt slightly into the meat. Not too much! This makes an extremely juicy burger but if you want more decadence, you can pour the pan sauces over your burger.
